Maison Hearth is a small restaurant on NE Alberta. We cook over wood, bake our own bread daily, and write the menu around what's coming out of the ground this week. Twenty-four seats. One seating most nights.
Every plate that leaves our pass has a name attached to it — the farmer, the baker, the fisherman in Astoria. We work with thirty-eight producers within a hundred miles of the door, and we put their names on the menu because their work makes ours possible.
We cook for the room we have, not the room we wish we had. That means twenty-four chairs, one seating, and an honest plate at every one of them.

A nod to the Columbia, salt-cured then cold-smoked over alder, served on rye toast.
Twelve-hour shoulder, charred over fire, with a quick-pickled cabbage. Serves two.
Toasted buckwheat, oolong cream, plums from Sauvie Island when we can get them.
